One of the most famous foods in Italy after pasta is risotto.
Spain has its elegant tradition of preparing rice but cooking it in another shape, Paella is one of them and I like it very much. I have always believed that the best way to adapt and live in a foreign country is to taste every local dish, buy typical products and try to get to know the locals. Cooking is one of my passions and thanks to a friend I learned to cook Paella. Tony has been the owner of the Don Antonio restaurant in Javea for many years and I have known him for a long time. He fulfilled my wish and called me to his kitchen to show me how to prepare Paella.
He had to prepare it for customers, what better opportunity to do it step by step with the doors closed? I share this experience with you!

First of all, we need good rice, we used the one from Fallera which keeps texture cooking.
Obviously you must have the appropriate pot, called paellera, which you can buy in almost all Javea stores (ops .. in Spain).
We will also need chickpeas, white Spanish beans and snow peas. We will have prepared pieces of chicken, shrimp squid and mussels (which instead we will cook separately to add them at the end as a decoration).
We start by browning the chicken with a drizzle of oil and garlic, we brown it well before adding salt and pepper. Only when it is really well colored do we add the vegetables, prawns, and squid and cover with the broth and spices.

The most delicate phase is now slow cooking, with a large lid let our ingredients cook little by little.
We taste occasionally to adjust salt and/or add the broth.
Don Antonio is famous among the Javea restaurants in the Salada area for offering the Paella Take Away service, it has pans of all sizes and customers who come from nearby and fewer urbanizations, such as Balcon al Mar, Tosalet, Costa Nova or Cap Marti . It is in a strategic position, therefore perfect also for those who are in the Arenal area.
I prefer to eat Paella in his restaurant, but on some Sundays I delighted in preparing it at home and it was fun.
